Hi Guys! I saw this yummy looking spaghetti squash at our local grocery store the other day and it sparked an interest. I have never used a spaghetti squash myself, yes I know, with all of my culinary expertise one would think I have cooked with it before ;). Considering I grew up in a small town in PA where fried bologna sandwiches on white bread were an every day norm, this is what I like to call “progress”.
So, I made the purchase and instantly started looking for recipes. Now, there are SO many out there, but I stumbled on one that tickled my palate and you can find that recipe here on All Recipes.
Here is how the magic happened:
Ingredients Needed:
1 Spaghetti Squash
2 cloves of Garlic
1 small onion
1/2 Bell Red Pepper
8 Cherry Tomatoes
2 Cups Kale
Sliced Mushrooms
1/2 cup sour cream
3/4 cup cheese ( I used parmesan, cheddar and feta)
1 tbs. Olive Oil
The Process:
1) Preheat oven to 400 F. Slice Spaghetti Squash in Half. Place cut side down on greased baking pan (I used olive oil spray). Bake for 30-35 minutes or until soft. Pull out of oven and let cool down. Leave the oven on for the baking.
Once squash is cooled down, take a fork and scrape out the squash and place in separate bowl. Compost the outside layer.
2) While Squash is cooling, start to sauté onions and garlic in Large Skillet with Olive Oil. Once onion starts to become translucent, add the kale and red pepper. As those soften, next add the mushroom, tomato, and sour cream. Then finally add the cheese and mix. Turn off skillet.
3) Add Squash to mixture and stir. Then add some extra parm or bread crumbs on top. Place in oven and bake for 15-20 minutes.
4) Last step, ENJOY!
