Happy Tasty Tuesday guys! So, today’s recipe is seriously the lazy Mama’s curry recipe. This is probably geared towards the college aged chef, but hey, it tastes dee-lish and it’s easy and perfect during a busy work week!
Here is what you need:
1 cup rice
1 cup cauliflower
1 cup broccoli
1 cup squash
1 cup carrots
1/2 cup mushrooms
1/2 onion
2 cups spinach
1/2 cup red pepper
1 Jar Trader Joes’ Red Thai Curry Sauce
How to prepare:
Cook rice according to instructions, I use a rice cooker. Sauté onion first until translucent. Next add carrot, cauliflower and squash. Once this is still firm add broccoli, pepper, and mushrooms. Lastly add spinach and jar of sauce. I typically add almond milk to jar of sauce and shake to get all of it out. You could add some hot spices if you wish, we have a toddler, so we try to keep things on the mild side :) Cover and simmer on low until rice is done.
