Tasty Tuesday – Easy Chicken Slaw Stir Fry

Hi Guys!  I do apologize for my hiatus, I was on a seriously relaxing vacation to Cape May,  NJ with my family (miss you Mom, Doug and Beckerloo). It was the most amazing trip and I decided to take a break from the blogging world and just enjoy myself to the fullest! But, now I am back and I am super excited to share with you this really easy recipe!

I got home and still had a bag of coleslaw mix with cabbage and carrots in the fridge. I looked at it and thought, what can I do with this other than make coleslaw? I googled and found some ideas, but I didn’t quite have the ingredients some of the recipes called for, so what to do? Yup, make something up! Here is how it’s done…

Easy Chicken Slaw Stir Fry

Ingredients Needed:

Chicken Breast
Bag of Slaw Mix
1 tbsp. Olive Oil
1 cup of cauliflower
1/2 cup of red pepper
1/2 cup of mushrooms
1 bottle of Trader Joes Goyza Sauce
Whole Wheat Pasta (any type of pasta will work)

How to Make:

Bring water to boil and add pasta and cook according to directions. Place Olive Oil in sauté pan on medium heat. Add sliced chicken breast. Once close to being cooked through, place Slaw mix in sauté pan. Cook for several minutes and then add cauliflower and red pepper. Once those are almost cooked, add the mushrooms. Next add the Goyza sauce and simmer. Once pasta is cooked, drain and add to sauté pan and stir together. It’s ready to serve and devour! I would have made it hot with chili flakes, but alas we have a toddler, but you could definitely make it spicy if you so desire.
