Tasty Tuesday – Delicious Gratin Potato Casserole

Happy Tasty Tuesday peeps! So, last week, I was staring at this box of potatoes au gratin and I thought… hmm… what can I do with this? So, I just made something up! And let me tell you, it turned out insanely good, surprisingly good actually! I know that boxed potatoes with powdered cheese is sort of like a disgustingly good, yet no nutritional value whatsoever type of food source, so we only eat these on rare occasions, but I tell you what, I enjoyed every bite!

Potatoes Au Gratin Casserole

Here is what you need:

1 Box Potatoes Au Gratin
2 Tofurkey Italian Sausage Links (or you could use real sausage)
1/2 an onion
1 Red Pepper
10 mushrooms
3 cups spinach
Broccoli
1  cup milk
2 cups water
1/4 cup cheddar cheese

Here is how it’s done:

Preheat oven to 425 degrees F

Cook the potatoes according to stove top directions for about half the time. Add the potatoes, cheese packet, water, and milk and bring to a boil and then turn down to simmer. (Only cook about half because we are also going to bake it)

While the potatoes are cooking, Sauté diced onion until translucent. Add Tofurkey Sausage and red pepper. Lastly add the mushrooms, broccoli and spinach (I don’t want to over cook these).

Once these veggies look al dente, place at bottom of greased (I used olive oil spray) casserole dish. Next place the half-cooked potatoes on top. Then add a bit more milk, I just eyed this up and added the shredded cheddar on top. Place in oven at 425 degrees and bake uncovered for about 20 minutes.

Voila! And there you have it! A super easy peasy weeknight meal! This is perfect for a cold night and both toddler and hubby loved this meal! Do you use potatoes out of the box? What have you made with them?
