Tasty Tuesday – Tilapia and Polenta with a Pesto Mushroom Tomato Ragu

It’s Tasty Tuesday time! It was warm here in Ptown and I just knew I wanted to make an entrée featuring fish. I had tilapia in the freezer and picked up some Polenta from Trader Joe’s and bam, that was going to be the combo!

Tilapia Pesto Polenta Recipe


3-4 Tilapia Fillets
Trader Joe’s Polenta Log
3 Cups Spinach
1/4 onion
10 mushrooms
2 Garlic Cloves
Pesto or Frozen Basil Cubes (from TJ’s) {As much as you like}
15-20 small Cherry Tomatoes
Olive Oil
Salt and Pepper
Garlic Salt

How to Prepare:

1) Ragu:

Heat olive oil on Medium in sauté pan. Add chopped onion and cover with lid. Allow onion to become translucent. Add chopped cherry tomatoes, pesto/basil cubes and garlic and let simmer for a couple of minutes. Next add the diced mushrooms and spinach and add a dash of salt and pepper then turn off burner and let slowly simmer.

2) Polenta:

Since, I did not make my own polenta, I simply just needed to slice the polenta log. While making the Ragu, place polenta slices in another sauté pan with olive oil. Cook on each side for about 5 minutes. I added salt, pepper and cheddar cheese to add a bit of flavor.

3) Tilapia:

Lastly, I cooked the Tilapia in a sauté pan with olive oil. I added some lemon juice, garlic salt, salt and pepper and cooked until desired temperature.

Voila! Easy Peasy Weeknight meal! This only took me about 25 minutes from start to finish! My husband raved about the dish and Milly was a fan of the polenta (I added cheese for her). What are your favorite Fish recipes? Do you use polenta as an easy dinner side dish?
