It’s that time again… Tasty Tuesday! Woot woot! So, I was thinking what to make and images of my childhood rushed trough my head… salmon casserole and macaroni…umm!! But, now that I am an adult, I wanted to mature it up a bit. I decided to make Salmon Cakes with Wild Rice and Sautéed Spinach. This is a fast, easy weeknight meal you can do in less than 20 minutes!
What you Need for Salmon Cakes:
1) One 6 oz. Can of Alaskan Salmon ( I used Bear and Wolf Wild Alaskan Salmon)
2) Bread Crumbs ( add to your delight and when moisture is absorbed)
3) 1/4 cup chopped Kale
4) Chopped finely Red Pepper
5) 1/2 Small Onion
6) 1 tbsp. Cumin
7) Couple dashes of Garlic Salt
8) Dash of Salt
9) Dash of Pepper
10) 2 tbsp. Light Mayo
11) 1 tbsp. Grain Mustard
12) 1 tbsp. Worchestire
Combine All ingredients in Bowl. Form into patties. This made about 4 patties for us. Sautee in Large Skillet with Olive Oil until lightly browned. Serve with Rice, Cous Cous, Quinoa, Salad, you name it! Lots of options for sides. I served it with Wild Rice and sautéed spinach and it was Dee-lish!
